Rhubarb and Strawberry Cake Ball Recipe

Cake balls are the perfect bite-sized blend of cake, frosting, and sweet candy coating. Not only are they delicious, they also make an impressive handmade gift. Even better, they're so easy to prepare, and with the right ingredients, the flavour combinations are endless.
Prepare the cake mix as per the instructions on the box. Once the cake has completely cooled, crumble it into a large bowl and mash it well with a wooden spoon. Now add half the frosting from the tub and the rhubarb flavour oil. Mix well.
Once the ingredients are full incorporated, use your hands to begin rolling the mixture into one inch balls. Place the balls on a lined baking tray. It's helpful to rinse your hands under cold water several times while rolling out the mixture. When you are finished rolling the mixture into balls, place them in the refrigerator for 15-20 minutes.
Using a double boiler or microwave, melt the strawberry candy melts. Once completely melted, begin dipping the balls of cake – one at a time – into the candy melt liquid to coat them well and then place them on a lined baking tray to firm up.
Once the cake balls have cooled completely, they are ready!

- 500g strawberry candy melts
