Flavoured Cupcake Recipe

With the addition of flavour oil, your cupcake possibilities are endless. This recipe can easily be doubled.

Preheat oven to 180C and line a muffin tin with paper cases.

Combine the two flours in a bowl and set aside.

In a large mixing bowl, beat the butter, vanilla extract, and sugar until fluffy. Add eggs one at a time and mix well between additions.

Add ¼ of the flour to the creamed butter mixture along with ¼ of the milk and beat until smooth. Repeat this step three more times until all of the flours and milk have been added.

Spoon the mixture into the paper cases, taking care to divide the batter evenly between the 12 cavities. Bake for approximately 25 minutes until golden or until an inserted skewer comes out clean.

Once the cupcakes are done, remove them from the oven and allow them to rest in the tin for at least 10 minutes before removing them to cool on a wire rack. Once they are completely cooled, ice them with your favourite buttercream.

  • 220g caster sugar
  • 2 large eggs, at room temperature
  • 160g self-raising flour, sifted
  • 110g plain flour, sifted
  • 120ml semi-skimmed milk, at room temperature
  • 5ml teaspoon vanilla extract
  • 5ml flavour oil
